Teacher Energy Bites Recipe
This recipe is so easy it can be made the night before school!
**I make this recipe with peanut butter, but sunflower seed butter or almond seed butter can easily be used as an alternative.
Teacher Energy Bites
No-bake energy bites perfect for a busy teacher when hunger strikes.
Equipment
- Standing or Hand Mixer
Ingredients
- 1 Cup Rolled Oats If you don't like oat texture, grind the oats to a powder first.
- ½ Cup Flax Seed
- ¼ Cup Chocolate Chips I love to use the mini ones!
- ¼ Cup Unsweetened Cranberries
- 1 tsp Vanilla Extract
- ⅓ Cup Honey
- ¾ Cup Nut Butter
Instructions
- Mix all dry ingredients together.
- Add the wet ingredients.
- Mix well.
- Roll into 2 inch balls. Place on parchment paper or a tray.
- Refrigerate!
Notes
Too wet? – Add more oats
Too Dry? – Add more honey or nut butter.
These last up to a week in the fridge. So you can grab one as needed! Make enough to share!
